Variety of olives: frantoio (correggiolo), about 70% - leccino – moraiolo – pendolino.
Harvesting: hand picked, not completely ripe, in betweem end of Oct. and mid Nov.
Extraction: cold pressing – day by day
Average yield per 100 kg. of olives: about 12 – 14 %
Average acidity (in terms of free oleic acid): 0,2 – 0,3 %
Organolectic characteristics: golden yellow with greenish tints (after decantation) – fruity with a pleasantly bitter aftertaste – intense and abundant perfumes
Average production: about 1.500 litres
